SOUTH-WEST FRANCE · THE ESTATE

The world
A château estate in the South-West, held in full. Vineyards and pine forest, a hot-spring spa nearby, the Atlantic an hour and a half west. The world here is the estate and its region: the grounds, the garden, the vineyard, the table, and a season whose centre is summer.

The season
The estate lives from late spring through late autumn, with summer as its centre of gravity. It is one stay that breathes across the season rather than separate editions: the early season opening to soft lengthening light; high summer at its fullest and most outward; the late season drawing in toward the harvest. The same estate, inhabited differently as the light, the table and the season move.
The table
The table is drawn from the South-West's provision and the estate's own vineyard and garden — morning broth and the long midday table, the summer grill and garden, the richest game and vintage of the harvest. Unhurried and generous in time, closing each day at the candlelit return.

The gathering
The stay turns once toward a single gathering the place offers honestly: the Atlantic day at the coast, which the warmer months pull toward; or the harvest gathering, a wine-led celebration drawn from the region's vineyards, which the late season pulls toward.
